2 bunches kale, stemmed and finely chopped 2 carrots, julienned 1 small red onion, minced ½ cup dried cranberries 2 Key limes, juiced 1 lemon, juiced 3 tablespoons mayonnaise 2 tablespoons white sugar 2 tablespoons olive oil ½ teaspoon salt ground black pepper to taste Directions
Place kale into a large bowl. Add carrots, onion, and cranberries. Toss to mix well. Whisk Key lime juice, lemon juice, mayonnaise, sugar, oil, salt, and pepper together in a separate bowl.
