All the goodness of chocolate chip cookies plus protein, fiber, and vitamins. Even my picky kids love them. I keep them in the freezer and pop a couple into lunches for a nutritious treat.Ingredients | Cookie Dough Bites
2 cups all-purpose flour
⅔ cup soy protein powder (such as MLO®)
⅓ cup oat flour
1 cup white sugar
1 cup brown sugar
½ cup plain Greek yogurt
½ cup butter, softened
2 teaspoons vanilla extract
2 tablespoons milk, or more as needed
2 cups chocolate chips
Directions
Combine all-purpose flour, soy protein powder, and oat flour together in a bowl.
Beat white sugar, brown sugar, yogurt, and butter together in a large bowl with an electric mixer until smooth and creamy. Add vanilla extract. Stir in flour mixture. Mix in milk, 1 tablespoon at a time, until batter is thick and smooth. Fold in chocolate chips.
Roll batter into 1-inch balls with your hands. Arrange on a baking sheet. Transfer to the freezer and chill until firm, about 1 hour, or in the refrigerator, 2 to 3 hours.
Substitute gluten-free flour for all-purpose flour for a gluten-free version.
Any protein powder will work. I like MLO(R) because of the extra vitamins and minerals.
